Ingredients
2 cups raw pecans 1 cup sundried tomatoes soaked and drained or 1 cup fresh tomatoes 6-8 medium organic apples (fuji, gala, golden delicious) ¼ sweet onion or 1 tsp onion powder 1 Tbsp caraway seeds 1-2 tsp garlic powder 1-2 tsp sea salt 2 ½ cups ground flax seed (if you used fresh tomatoes, you may want to add a little more flax to absorb the extra liquid) Any other mixed herbs or spices you’d like to add  

Grind pecans in food processor to become pecan flour. Add to large bowl. Process apples, tomatoes and onion and place in bowl. Add spices and mix well. Add ground flax seeds and mix with hands to ensure all flax clumps are gone. Check for flavor and adjust if necessary. (keep in mind spices become stronger in flavor as you dehydrate them)

Spread onto texflex dehydrator sheet. Cover the entire sheet to the edges. Score with butter knife into 9 equal pieces. Dehydrate at 110 degrees 8-12 hrs then flip onto mesh tray and remove texflex sheet. Dehydrate 6-10 more hours or until bread reaches the desired consistency.

I like my bread a little moist so I always store it in an airtight container in the fridge to ensure it stays fresh and free of mold over time. I’ve stored it this way for up to 3 months. I’m sure you can freeze excess bread as well, though I haven’t tried it yet.

Ground flax seeds can easily go rancid so if you have extra ground flax, store that in the fridge as well.

Feel free to get creative with this recipe. In the summer when my garden is overflowing with tomatoes and zucchini, I add zucchini in place of some of the apples and add extra tomato. One of the things I missed most after changing to a raw food diet was eating sandwiches. The funny thing is that despite my love for sandwiches, I didn’t realize I could make raw bread until just last year! Silly, I know but I just figured bread was not longer an option.

Thankfully, my friend Lara brought some raw sandwiches over one day, along with the recipe. The moment I tasted her sandwiches, I was in love! She found the original recipe on – YouTube – and changed it up a little. Then I took her newly created recipe and changed it to my liking. Once you’ve made the bread a few times and have tweaked the recipe to just the way you like it, I strongly suggest making a double or triple batch when you do make it. Doing this will save you time and give you one more thing to have on-hand and ready to go when hunger strikes.
