1 cup raw almonds, soaked 12-24 hours and rinsed well
5 cups clean water
Add ingredients to Vitamix. Blend on 10 for 3-5 minutes. Strain through nut milk bag.
If you want creamier milk, reduce the amount of water to 3 or 4 cups.
Add a tsp of vanilla and a date or bit of honey and dash of salt for more flavorful milk.
Basic Almond Milk
When I make almond milk, I leave it as is and use it as a base for shakes, smoothies, and soups. Almond milk is so easy to make. The hardest part is remembering to soak the almonds the night before. I like to soak a few cups of almonds at a time and store them in the fridge ready to go. Unfortunately, almond milk only stays fresh for about 3 days in the fridge, so only make as much as you plan on using for a 3 day period. (when I do find I’ve got milk that’s going to go bad and know I won’t be using it, I pour it into ice cube trays to freeze and use in smoothies later.)
*almond pulp can be saved and dehydrated to make almond flour, or save as is and add to crackers, cookies, or pates.*
