3 cups raw cashews
2 tbsp. stone ground yellow mustard or more or less, to taste
2 tbsp. stone ground dark mustard or more or less, to taste
2 tbsp. raw apple cider vinegar
1/4 cup honey or more to taste
1 tsp. Real Salt
2-3 cups of water to desired consistency
Blend all ingredients in Vitamix or other high speed blender until smooth.
My friend Rachel shared this recipe with me years ago. It’s creamy and sweet. This is an EXCELLENT dressing for any Asian or sweet salad. I like it on spinach with chopped walnuts and apples or sliced red grapes.
This makes A LOT so you may want to half the recipe the first time you make it unless you’ve got a ton of people to serve.
