I have a wonderful neighbor who brings me produce every once in a while. She knows there’s plenty of hungry mouths at our house and that even if the produce is a little too ripe, or has been in the fridge a day too long, I’ll still create something with it so that it doesn’t go to waste.
Just the other day, she brought over a beautiful bunch of broccoli, which was just perfect because I had actually been thinking about getting some that day to make my favorite broccoli salad. She didn’t know it, but her gift of “day old” broccoli was actually inspired. I lovingly washed it and trimmed off the brown areas before I made the masterpiece…
I love this salad! It’s sweet, tangy, and crunchy. The flavor reminds me a bit of the coleslaw my mom used to make; she’d put raisins in it. Heck, she put raisins in almost everything!
Anyways, this salad is a very enjoyable way to eat broccoli. I try not to make it too often because I find myself eating way too much. It usually only lasts me two days because I’ll eat it for every meal till it’s gone.
